Ingredients: 5 lbs (700g) boneless lamb shoulder or chicken breast, cut into 1-inch cubes; 1 cup (100g) walnuts, finely ground; 1/2 cup (120ml) pomegranate molasses; 1/4 cup (60ml) water; 4 cloves garlic, minced; 1 medium onion, finely grated; 2 tablespoons olive oil; 1 teaspoon ground coriander; 1 teaspoon paprika; 1/2 teaspoon ground black pepper; 1/2 teaspoon salt (or to taste); 1/4 teaspoon ground cumin (optional); 1 tablespoon fresh lemon juice; 2 tablespoons chopped fresh cilantro or parsley for garnish; 8-10 wooden or metal skewers (if using wooden, soak in water for 30 minutes)
