Ingredients: *For the Rempah (Spice Paste):**; 10 Dried red chilies (soaked in hot water to soften); 150g Shallots (peeled); 5 cloves Garlic (peeled); 3cm Galangal (peeled and sliced); 3cm Turmeric (peeled and sliced, or 1 tsp turmeric powder); 3cm Ginger (peeled and sliced); 2 stalks Lemongrass (white part only, thinly sliced); 3 Candlenuts (or macadamia nuts); 1 tbsp Belacan (shrimp paste), toasted; *For the Curry:**; 5 kg Chicken (thighs and drumsticks, bone-in, skin-on); 200g Prawns (shelled and deveined); 400ml Coconut milk (1 can); 400ml Water; 100g Potato (peeled and cut into chunks); 3 tbsp Cooking oil; 2 sprigs Curry leaves; 1 piece Turmeric leaf (tied into a knot, optional); 2 tbsp Tamarind paste (mixed with 4 tbsp water, strained); 1 tbsp Gula Melaka (palm sugar) or brown sugar; Salt to taste
