Ingredients: 2 lbs sea turtle meat (mixed cuts, cleaned and chopped into 1-inch pieces); 1 lb smoked pork (such as ham hock or smoked turkey); 1/4 cup vegetable oil; 1 large onion, diced; 1 green bell pepper, diced; 1 red bell pepper, diced; 4 celery stalks, diced; 4 cloves garlic, minced; 1 Scotch bonnet pepper, whole (pierced, do not cut); 2 large carrots, peeled and sliced; 2 potatoes, peeled and cubed; 1 cup okra, sliced into 1/2-inch rounds; 1 (14.5 oz) can diced tomatoes; 4 cups turtle or beef broth (or water); 1 teaspoon dried thyme; 1 teaspoon dried oregano; 1 bay leaf; 1 teaspoon salt (or to taste); 1/2 teaspoon black pepper; 1/4 cup fresh parsley, chopped; 1/4 cup fresh cilantro, chopped; 1/4 cup fresh lime juice (about 2 limes)
