Ingredients: 2 lbs beef tripe, thoroughly cleaned and cut into bite-sized pieces; 1 lb beef shank or stew meat, cut into chunks; 6 dried guajillo chilies, stems and seeds removed; 4 dried ancho chilies, stems and seeds removed; 2 dried chiles de árbol, stems removed (adjust for heat preference); 1 large white onion, quartered; 4 cloves garlic, peeled; 2 medium tomatoes, quartered; 1 teaspoon cumin seeds or ground cumin; 1 teaspoon dried Mexican oregano; 1/2 teaspoon black peppercorns; 2 bay leaves; 8 cups water or beef broth; 2 tablespoons vegetable oil; 1 cup chopped white onion (for garnish); 1/2 cup chopped fresh serrano or jalapeño chilies (for garnish); 2 limes, cut into wedges (for serving); Salt to taste; Fresh cilantro, chopped (for garnish)
