Ingredients: 5 kg lamb shanks or shoulder (bone-in, cut into large pieces); 200g qadid (dried meat), soaked overnight and shredded; 2 large onions, finely chopped; 4 cloves garlic, minced; 1 preserved lemon (leqsmar), pulp removed, rind rinsed and sliced; 100g smen (Moroccan preserved butter) or unsalted butter; 2 tablespoons olive oil; 1 teaspoon ground turmeric; 1 teaspoon ground ginger; 1 teaspoon ground cumin; 1 teaspoon black pepper; 1/2 teaspoon saffron threads, crushed; 1 cinnamon stick; 1 small bunch fresh cilantro, tied with kitchen twine; 1 small bunch parsley, tied with kitchen twine; 1 liter water or beef/lamb stock; 3 large carrots, peeled and cut into chunks; 3 medium potatoes, peeled and halved; 1 turnip, peeled and quartered; 1/2 cup green olives (optional); Salt to taste
