Ingredients: 1 medium pineapple (about 800g), peeled, cored, and cut into chunks; 400g large prawns, shelled and deveined (leave tails on if preferred); 200ml thick coconut milk; 400ml water or thin coconut milk; 2 stalks lemongrass, bruised; 3-4 kaffir lime leaves, torn; 1 tablespoon tamarind paste (asam jawa), mixed with 3 tablespoons water; 1 teaspoon salt, or to taste; 1-2 teaspoons sugar, to balance the acidity; 2 tablespoons cooking oil; *Spice Paste (Bahan Kisar):**; 6 shallots; 4 cloves garlic; 2cm piece of fresh turmeric (or 1 teaspoon turmeric powder); 2cm piece of ginger; 2cm piece of galangal (lengkuas); 3-4 dried chilies, soaked in hot water to soften; 2 fresh red chilies (optional, for color and heat)
