Ingredients: *For the Potato Gravy Base:**; 2 large potatoes (approx. 400g), peeled and cubed; 5 liters water; 100g dried shrimp (small), soaked for 20 minutes; 80g peanuts, soaked and blended into a coarse paste; 50g dried chillies (soaked and blended into paste) or 3 tablespoons ready-made chilli paste; 4 shallots, sliced; 3 cloves garlic, sliced; 2 stalks lemongrass, white part only, bruised; 2 tablespoons cooking oil; *For the Seasoning:**; 3 tablespoons tamarind paste (asam jawa), mixed with 1/2 cup water and strained; 3 tablespoons sweet soy sauce (kecap manis); 2 tablespoons brown sugar (or palm sugar/gula melaka); 1 teaspoon salt (or to taste); 1/2 teaspoon ground white pepper; *For the Noodles and Assembly:**; 800g fresh yellow egg noodles (or 400g dried egg noodles); 200g bean sprouts, blanched; 200g firm tofu, cubed and fried until golden (or fried tofu puffs); 4 hard-boiled eggs, halved; 100g Chinese chives (kucai), cut into 2-inch lengths; 2 limes, halved; Fried shallots for garnish; Sambal belacan (chilli shrimp paste) for serving (optional)
