Ingredients: *For the Poached Chicken:**; 1 whole chicken (about 1.5 kg or 3.3 lbs), preferably a "kampung" or free-range chicken; 1 tablespoon salt; 3 stalks spring onions, cut into 2-inch lengths; 4-5 thick slices ginger, lightly smashed; 2-3 cloves garlic, smashed; 2 liters water (for poaching); *For the Chicken Rice:**; 3 cups Jasmine rice, washed and soaked for 30 minutes, then drained; 3 tablespoons chicken fat or cooking oil (rendered from chicken skin is best); 4 cloves garlic, minced; 4 thick slices ginger, minced; 2 pandan leaves, tied into a knot (optional but traditional); 3 cups of the reserved chicken poaching broth (measured after poaching the chicken); 1 teaspoon salt (adjust to taste); 1/2 teaspoon white pepper; *For the Chili-Ginger Sauce:**; 5-6 red bird's eye chilies (or to taste); 3-4 thick slices ginger; 2 cloves garlic; 1 tablespoon lime juice or calamansi juice; 1 teaspoon sugar; 2 tablespoons reserved chicken broth (from the poaching liquid); *For Serving:**; 1/4 cup light soy sauce; 1 cucumber, sliced into rounds; Fresh cilantro (coriander) leaves for garnish
