Ingredients: 2 lbs pork belly, skin-on, cut into 1-inch thick slabs; 4 cloves garlic, smashed; 3 slices ginger, about the size of a quarter; 2 whole green onions (scallions), tied into a knot; 2 tablespoons vegetable oil; 1 cup fried shallots (optional, but highly recommended for authentic flavor); 1/2 cup soy sauce; 1/4 cup dark soy sauce (for color and depth); 1/2 cup Shaoxing wine (or dry sherry); 3 tablespoons rock sugar (or brown sugar); 4 cups water, or enough to almost cover the pork; 2 whole star anise; 4 large eggs, hard-boiled and peeled; 2 cups pickled mustard greens (suan cai), rinsed and roughly chopped; 4 servings steamed jasmine rice; Fresh cilantro or green onions, chopped, for garnish
